01 - Preheat the air fryer to 400°F (200°C) for 3 minutes.
02 - In a large mixing bowl, toss the sweet potato cubes with olive oil, smoked paprika, garlic powder, sea salt, and black pepper until evenly coated.
03 - Place the seasoned sweet potato cubes in a single layer in the air fryer basket. Work in batches if necessary to avoid overcrowding.
04 - Air fry at 400°F for 12–15 minutes, shaking the basket halfway through cooking, until the cubes are golden and crisp on the edges and fork-tender inside.
05 - Transfer to a serving dish and serve hot. Garnish with fresh herbs or an extra sprinkle of sea salt if desired.
