# How to Prepare:

01 - Heat olive oil in a large skillet over medium heat. Sauté diced onion and bell pepper for 4-5 minutes until softened. Add chopped spinach and cook until wilted.
02 - Whisk eggs with salt, pepper, and smoked paprika in a bowl. Pour the seasoned eggs into the skillet with the sautéed vegetables, stirring gently until just scrambled and cooked through.
03 - Stir in the cooked sausage crumbles and drained black beans. Remove the skillet from heat.
04 - Divide the cooked quinoa or brown rice evenly among four freezer-safe containers.
05 - Top each bowl with equal portions of the egg and vegetable mixture. Sprinkle with shredded cheese if using.
06 - Allow bowls to cool completely before sealing with lids. Label each container and freeze for up to 2 months.
