Vibrant, tangy-sweet homemade spread bursting with four berry varieties. Perfect for toast, yogurt, or gifting.

# What You'll Need:

→ Fruits

01 - 2 cups strawberries, hulled and chopped
02 - 1½ cups rhubarb, sliced (fresh or thawed from frozen)
03 - 1 cup raspberries
04 - 1 cup mixed berries (blueberries, blackberries), fresh or frozen

→ Sweetener

05 - 2½ cups granulated sugar

→ For Setting

06 - 2 tablespoons lemon juice, freshly squeezed
07 - 1 package (1.75 oz) fruit pectin powder

# How to Prepare:

01 - Combine strawberries, rhubarb, raspberries, and mixed berries in a large non-reactive pot. Mash lightly with a potato masher to release juices.
02 - Stir in lemon juice and fruit pectin. Mix thoroughly and let stand for 5 minutes to activate pectin.
03 - Place pot over medium-high heat and bring mixture to a boil, stirring frequently to prevent sticking.
04 - Add sugar all at once, stirring until completely dissolved. Return to full rolling boil and boil hard for 1-2 minutes to reach setting point.
05 - Remove from heat. Skim off any foam from surface using a large spoon.
06 - Ladle hot jam into sterilized jars leaving ¼-inch headspace. Wipe rims clean, seal with lids, and process in boiling water bath for 10 minutes for long-term storage.
07 - Allow jars to cool completely at room temperature. Refrigerate opened jam and consume within 3 weeks.

# Expert Advice:

01 -
  • The rhubarb cuts through the sweetness giving you this sophisticated tang that keeps you coming back for just one more taste
  • Four different berries mean every spoonful is a little adventure in flavor and texture
  • This jam turns basic morning toast into something that feels like a weekend treat
02 -
  • That foam you skim off is actually edible and makes the most incredible instant treat on a piece of toast while you wait for the jars to process
  • A rolling boil means bubbles are covering the entire surface and you can't stir them down, not just simmering gently around the edges
  • If your jam doesn't set as firm as you'd like, call it spoonable fruit preserve and it'll be just as delicious on everything
03 -
  • Start checking your jars for seals after 12 hours, and any that didn't seal should go straight to the refrigerator
  • Label your jars with the date and type of jam, because six months from now you won't remember which batch had the extra vanilla
