07 - 2 cloves garlic, minced

10 - 1/4 tsp ground turmeric
11 - 1/2 tsp chili flakes (optional)
12 - Salt and pepper, to taste

→ Other Ingredients

13 - 3 tbsp olive oil, divided
14 - Fresh parsley or chives, chopped (for garnish)
15 - Hot sauce, to serve (optional)

# How to Prepare:

01 - Place diced potatoes in a large pot, cover with water, and boil for 4-5 minutes until slightly tender. Drain thoroughly and set aside.
02 - Heat 2 tbsp olive oil in a large skillet over medium-high heat. Add the partially cooked potatoes and sauté for 8-10 minutes, stirring occasionally, until golden brown and crispy on the edges.
03 - Push the potatoes to one side of the pan. Add remaining 1 tbsp olive oil, then add the diced bell peppers, red onion, and sliced mushrooms. Cook for 5-6 minutes until vegetables begin to soften.
04 - Stir in the minced garlic, smoked paprika, cumin, turmeric, and chili flakes. Cook for 1 minute until fragrant and spices are well distributed.
05 - Add the chopped spinach and sauté for 1-2 minutes until just wilted but still vibrant green.
06 - Mix all ingredients together thoroughly. Season with salt and pepper to taste, adjusting seasoning as needed.
07 - Transfer to serving plates and garnish with chopped fresh parsley or chives. Serve hot with hot sauce on the side if desired.

# Expert Advice:

01 -
  • The parboil trick gives you crispy edges without the long wait times of raw potato methods.
  • Everything cooks in one skillet, which means less cleanup and more time to enjoy your coffee.
02 -
  • Do not skip parboiling because raw potatoes will burn on the outside before cooking through.
  • Crowding the pan causes steaming instead of browning, so use the largest skillet you own.
03 -
  • Dice everything to similar sizes so each bite has a little of every ingredient.
  • A splash of liquid smoke transforms the flavor profile if you crave that campfire taste.
