01 - Crack eggs into a mixing bowl. Pour in milk or cream, then add salt and pepper. Whisk vigorously until yolks and whites are fully incorporated and mixture appears slightly frothy.
02 - Place unsalted butter in a nonstick skillet and set over medium-low heat. Allow butter to melt completely and wait until it begins to bubble gently.
03 - Pour whisked egg mixture into the heated skillet. Let it sit undisturbed for several seconds until the outer edges just start to set and become opaque.
04 - Using a heat-resistant spatula, gently push cooked portions from the outer edges toward the center of the pan. Tilt the skillet slightly to allow uncooked egg to flow into the empty spaces.
05 - Continue cooking while stirring gently and periodically. The eggs are done when they appear just set but still retain a creamy, slightly moist texture throughout.
06 - Remove skillet from heat promptly to prevent overcooking. Transfer eggs to plates while still hot and serve right away.
